Chilli fans, your relish is ready. North Africa meets the
North Coast in the latest fiery condiment from Blue Kitchen
- an all-purpose harissa made from organic ingredients at
Coraki's Junction Cafe and Pizzeria. Mix it into a chermoula
dressing; if you're adventurous, use it as a dip or try a
spoonful atop a laksa. The Junction Cafe adds it to lamb dishes,
pides, curries and salsas - and a couple of its regulars insist
on having harissa in the tomato paste of their pizzas. Hot

They are making it real on the far North
Coast. Not only does Blue Kitchen get its ingredients, wherever
possible, from certified organic growers but it also strives
to use indigenous and rainforest herbs, lemon myrtle among
them. The Green Curry Paste, named 'Best Paste' at last year's
Australian Fiery Food Industry Awards, goes one better - it
is formulated as an Australian rather than Asian spice, and
brings a singular, minty tang to, say, a chicken curry. Their
Hot Chilli Sauce lifts the flavour of grilled chops or prawns
or a laksa yet avoids the lingering afterburn - use it as
